This experimental mixed culture wild ale is a wild take on our Nordic Pale, featuring a combined appearance from the Persimmon Wild culture, now affectionately known as "Ellen", and a culture of Lactobacillus bacteria. The Nordic Yeast gets a 12 hour head start to get the fermentation going and then is introduced to its new roommates. From there it is an exciting and intriguing transformation that will continue for weeks and months until it is just right.
