6.2% ABV- Our first wild fermentation, from the skin of a NC Persimmon this wild ale got its start. A few tiny wild yeast live on the outside of this fruit as it ripens on the tree not 5 miles from the brewery. These few little critters were captured and propagated into an army ready to eat anything put in front of it. That fermentation tasted fruity and rich, with tons of overripe melon notes. But it wasn't until after the first frost last fall that the persimmons were ready to harvest. We aged this wild fermented ale on more extra ripe persimmons from the very same tree as the one which yielded the yeast. The result is a deliciously fruity and rich wild ale that really blurs the line between natural wine and ale.
